Green Beans in Mustard with Eggs - January 12, 2011

Constraints force the brain to work differently; and consequently, the brain sometimes, not always, surprises its owner with a brilliant solution. Here is one:  A solution to the green beans, which have been getting cold feet in my refrigerator.

Ingredients:
  • Green beans: 1lb - Cut into 1-inch length;
  • Onion: 1/4 lb - Finely diced;
  • Mustard:  2 Tablespoons
  • Eggs:  2 - Boiled then chopped
  • Vinegar:  1 Tablespoon
  • Parsley:  A few springs - Roughly chopped
  • Salt & Pepper
Preparation:
  1. Microwave the beans; drain the excess liquid.
  2. Lightly salt the beans.
  3. Add onion to the still hot beans (the pungency will mellow from the heat).
  4. Add eggs, mustard and vinegar to the beans.
  5. Salt & pepper to taste.
  6. Mix in the parsley.
