Spong Cake Redux: New Kam Hing Coffee Shop - January 17, 2011

The euphoria of the first date is, more often than not, misleading; otherwise, we would have gotten married a hundred times over.  Say thanks to our instinctive skepticism. Therefore, when the second date comes around, without the element of surprise and under the broad day light, the former allure usually seems to have toned down a shade or two. However, such will not be the case when the person, or a cake, is made of true ingenuity.

The sponge cakes from the first two times were the same angelically fluffy cloud of eggs, sugar and flour. However, the third time, it got fancy:  There was a thin layer of soufflé, located one third in height from the bottom. This new moist layer manages to enhance the good egginess even more and varies the texture of the cake on the tongue. Very interesting.

Although not quite sure this new soufflé layer is a mere aberration or a permanent change, the cake is simply and absolutely delicious, nonetheless. Let's see how long a dozen sponge cakes will last this time.
