Ingredients:
- Green beans: 1lb - Cut into 1-inch length;
- Onion: 1/4 lb - Finely diced;
- Mustard: 2 Tablespoons
- Eggs: 2 - Boiled then chopped
- Vinegar: 1 Tablespoon
- Parsley: A few springs - Roughly chopped
- Salt & Pepper
- Microwave the beans; drain the excess liquid.
- Lightly salt the beans.
- Add onion to the still hot beans (the pungency will mellow from the heat).
- Add eggs, mustard and vinegar to the beans.
- Salt & pepper to taste.
- Mix in the parsley.
